Recipe: No (added) Sugar Banana Bread by Nadia Lim

GOING BANANAS?

Have a bunch of brown bananas lying around? You've got to try this recipe!

Since I haven't been moving around in my van lately because I have been cat/house sitting, I've used this time to get into the kitchen, use an oven, and get back to my love of baking!

This is not my own recipe but one from the legendary Nadia Lim

This would be a great pre-training snack, or during a long training session. It's pretty tasty as an afternoon morsel or a dessert with yoghurt and peanut butter (the latter not optional ;0). No added sugar, you get the sweetness from the bananas. The darker the banana, the sweeter it will taste.

I made this gluten-free and dairy-free to see how it tasted. I also added in some lemon zest and lemon juice which added a little zing!

Let's say there was more than one helping after the first 'sample'. The recipe shares how you can alter the ingredients to suit dietary needs. Thanks, Nadia! Also, I made it one big loaf tin rather than two smaller loaves. It might last longer if you make two smaller ones?? You can freeze this too.
